You still get every mode EA FC 27 has to offer, including Career Mode, Clubs, Ultimate Team, and the new open world setting, The Grounds. Pre-ordering it even nets you a handful of Career and Grounds bonuses along with a 92+ OVR ICON pick for FC 26, so it is far from a bare-bones purchase.
The Ultimate Edition is where things get interesting, and where EA Sports clearly wants the majority of the player base to land. The early access alone is a real selling point if you want a head start of around a week, and the FC Points plus Evo slot make Ultimate Team grinders' lives noticeably easier from day one.

My honest take is that most players should just get the Standard Edition, and I have considered many things before this conclusion. If you play EA FC 27 mainly for Career Mode, Clubs, or casual matches with friends, none of the extra Ultimate Team perks via the Ultimate editions are going to matter much to your day-to-day experience.
Ultimate Edition is ideal for those who play Ultimate Team regularly but don't want to go all in financially. The early access window is genuinely nice if you like to get a head start against other competitive players, and 6,000 FC Points over three months is enough of a cushion to open packs without feeling like you are constantly out of currency. It sits in a comfortable middle ground for most serious but not obsessive FUT players.
