Godhuma Rava Makhana Payasam is a nutritious breakfast that combines broken wheat, fox nuts, milk, jaggery and dry fruits into one wholesome dish.     To prepare the payasam, you will need half a cup of broken wheat (godhuma rava), one cup of fox nuts (makhana), 750 ml of milk, three-fourths of a cup of jaggery powder, two tablespoons of ghee, cashew nuts, soaked almonds, soaked poppy seeds, pistachios (optional), cardamom powder and a few strands of saffron if desired.

    Start by roasting the fox nuts in a little ghee for three to four minutes. Once cooled, grind half of them into a coarse powder and keep the rest whole.

    In another pan, lightly roast the broken wheat in ghee before cooking it with a little milk until soft. Add the remaining milk and simmer for several minutes.

    Blend the soaked almonds and poppy seeds with milk into a smooth paste before mixing it into the cooked broken wheat. Add jaggery for sweetness, followed by the powdered and whole fox nuts. Stir well over a low flame to prevent the milk from sticking.

    Finish by adding cardamom powder and topping the payasam with roasted cashews, almonds and pistachios before serving.

    Broken wheat is a good source of dietary fibre, which supports healthy digestion and may help keep you full for longer. Fox nuts provide protein along with calcium and magnesium, nutrients that support muscle and bone health.

    Milk contributes calcium and protein, while dry fruits add healthy fats, vitamins and minerals. Jaggery offers sweetness along with small amounts of iron and other trace minerals.
